Brunei Kuih Keria recipeIngredients

● 2 cups of glutinous rice flour
● 1/2 cup of sugar
● 1/2 cup of water
● 1/2 cup of coconut milk
● 1/4 tsp of salt
● Oil for deep frying

Instructions:

  1. In a mixing bowl, combine the glutinous rice flour, sugar, salt, water and coconut
    milk. Mix well.
  2. Heat the oil in a deep fryer or a deep pan over medium heat.
  3. Take a small amount of dough and roll it into a small ball.
  4. Flatten the dough ball and make a small hole in the center of it.
  5. Carefully place the dough into the hot oil and deep fry until golden brown.
  6. Drain on paper towels to remove any excess oil.
  7. Serve hot or cold with your favorite dipping sauce.

Brazilian Brigadeiros recipe

Ingredients:

● 1 can of sweetened condensed milk
● 2 tbsp of unsalted butter
● 2 tbsp of cocoa powder
● 1 tsp of vanilla extract
● Chocolate sprinkles or grated chocolate for rolling

Instructions:

  1. In a large saucepan, combine the sweetened condensed milk, butter, cocoa powder, and
    vanilla extract.
  2. Heat the mixture over medium heat, stirring constantly, until it comes to a boil.
  3. Continue to stir and cook the mixture for an additional 2-3 minutes, or until it thickens
    and starts to pull away from the sides of the pan.
  4. Remove the pan from heat and let the mixture cool for a few minutes.
  5. Once cooled, use your hands to shape the mixture into small balls about the size of a
    cherry.
  6. Roll the brigadeiros in chocolate sprinkles or grated chocolate.
  7. Place the brigadeiros on a plate or tray lined with parchment paper and chill in the
    refrigerator for at least 30 minutes.
  8. Brigadeiros are best served cold.

Bosnia and Herzegovina Burek Recipe

Ingredients:

● 1 lb of phyllo dough
● 1 lb of ground beef or lamb
● 1 onion, finely chopped
● 1/4 cup of vegetable oil
● Salt and pepper to taste
● 1/2 cup of sour cream or yogurt (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet or frying pan, heat the vegetable oil over medium heat.
  3. Add the chopped onion and sauté until softened, about 5 minutes.
  4. Add the ground beef or lamb and cook until browned, about 10 minutes.
  5. Season the meat mixture with salt and pepper to taste.
  6. Remove the skillet from heat and let the meat mixture cool slightly.
  7. Lay out one sheet of phyllo dough on a clean work surface and brush it with a little bit of
    vegetable oil.
  8. Repeat with another sheet of phyllo dough, lay it on top of the first sheet, and brush it
    with oil.
  9. Continue layering the phyllo dough and brushing each sheet with oil until you have used
    about half of the phyllo dough.
  10. Spread the cooled meat mixture over the phyllo dough, leaving a 1-inch border around
    the edges.
  11. Layer the remaining phyllo dough on top of the meat mixture, brushing each sheet with
    oil as before.
  12. Use a sharp knife to cut the burek into squares or wedges.
  13. Place the burek on a baking sheet and bake for 25-30 minutes, or until golden brown.
  14. Serve hot with sour cream or yogurt if desired.

Ingredients:

● 4 cups of flour
● 1/4 cup of sugar
● 1/4 tsp of baking powder
● 1/4 tsp of salt
● 1/4 cup of butter
● 1/2 cup of warm milk
● 1 egg
● 1/2 cup of beef or chicken broth
● 1/2 cup of diced cooked beef or chicken
● 1/4 cup of diced boiled potatoes
● 1/4 cup of diced green peas
● 1/4 cup of diced hard-boiled egg
● 1/4 cup of diced onion
● 1/4 cup of raisins
● 1/4 cup of chopped olives
● 1/4 tsp of ground cumin
● 1/4 tsp of ground cinnamon
● vegetable oil for frying

Instructions:

  1. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  2. Cut in the butter with a pastry cutter or your fingers until the mixture resembles coarse
    crumbs.
  3. In a separate bowl, beat the egg and mix in the warm milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Knead the dough on a lightly floured surface for about 2 minutes.
  6. Cover the dough and let it rest for at least 20 minutes.
  7. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
  8. Cut the dough into desired shape, traditionally they are cut into a circle or oval shape.
  9. In a separate bowl, mix together the beef or chicken, potatoes, green peas, hard-boiled
    egg, onion, raisins, olives, cumin, and cinnamon.
  10. Place a spoonful of the filling mixture into the center of each dough circle.
  11. Fold the dough over to form a crescent shape and press the edges together to seal the
    filling inside.
  12. Heat a large skillet or frying pan over medium heat and add enough vegetable oil to coat
    the bottom of the pan.
  13. Carefully place the salteñas in the hot oil and fry until golden brown on both sides, about
    2-3 minutes per side.
  14. Drain on paper towels to remove any excess oil.
  15. Serve hot with a cup of beef or chicken broth.

Bangladesh Rosogolla Recipe

Ingredients:

● 1 gallon whole milk
● 1 cup heavy cream
● 1/2 cup lemon juice or vinegar
● 1/2 cup flour
● 1/2 cup semolina
● 1/4 cup cornstarch
● 1/4 cup sugar
● 4 cups water
● 1 tsp rose water (optional)

Instructions:

  1. In a large pot, combine the milk and cream and bring to a boil over medium heat.
  2. Once the mixture begins to boil, add the lemon juice or vinegar and stir gently. The
    mixture will begin to curdle.
  3. Strain the curdled mixture through a cheesecloth-lined strainer to separate the whey
    from the curds.
  4. Gather the cheesecloth and squeeze out as much liquid as possible.
  5. In a separate mixing bowl, combine the flour, semolina, cornstarch, and sugar.
  6. Knead the curds until they form a smooth dough.
  7. Slowly add the flour mixture to the dough, kneading until well combined.
  8. Divide the dough into small balls about the size of a ping-pong ball.
  9. In a separate pot, bring the water to a boil.
  10. Carefully drop the dough balls into the boiling water and cook for 15-20 minutes, or until
    they have doubled in size and become firm to the touch.
  11. Remove the Rosogolla from the water and place them in a bowl of cold water for 5
    minutes.
  12. In a separate pot, bring 4 cups of water to a boil, add sugar, and then add the Rosogolla
    to it.
  13. Cook the Rosogolla in the sugar syrup for 15-20 minutes.
  14. Remove the Rosogolla from the sugar syrup and let them cool completely.
  15. Optional: Sprinkle rose water over the cooled Rosogolla for added flavor.

Note:

● The dough should be smooth, soft and non-sticky.
● You can also use store bought chenna for this recipe.
● The sugar syrup should be thick, not too sweet and not too watery.

● If you want to make sure that the Rosogolla has the right texture, you can insert a
toothpick in it, if it comes out clean then it’s cooked properly.

● 1/4 tsp salt
● 1/4 tsp saffron threads (crushed)
● 3/4 cup warm water

● 1/4 cup ghee (clarified butter)
● 1/4 cup date syrup or honey
● Sesame seeds, for coating

Instructions:

  1. In a large mixing bowl, combine the flour, yeast, salt, and crushed saffron. Stir to
    combine.
  2. Slowly add the warm water and mix until a dough forms.
  3. Knead the dough for about 10 minutes, until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm
    place for about 1 hour, or until doubled in size.
  5. Preheat the oven to 350 degrees F (175 degrees C).
  6. In a small saucepan, combine the sugar, ghee, and date syrup or honey. Cook over low
    heat until the sugar is dissolved.
  7. Once the dough has risen, roll it into small balls about the size of a golf ball.
  8. Dip each ball of dough in the sugar mixture, then roll it in sesame seeds.
  9. Place the balls of dough on a greased baking sheet and press them down slightly.
  10. Bake in the preheated oven for 10-15 minutes, or until golden brown.
